Ask just about anyone what they do when they have extra bananas, and you’ll get one of two answers: “bake with them” or “freeze them for later.” Few people do that with other types of fruit, but bananas? We’re all over that.
So what did I do when I found myself with extra bananas a couple of weeks back? I baked something, of course. This time, though, I wanted something a little different from the usual banana bread or muffins I usually make. I thought some sort of cupcake might be nice. Instead I stumbled upon this Sour Cream Banana Coffee Cake recipe from bake or break. It had me curious right away, and it looked simple enough. I figured I’d give it a shot.

Do you know what’s weird? This Apple Pie Cupcake recipe is one of my favourites. I came up with the recipe three or four years ago, and anyone who’s ever tried it loves it. And yet, somehow, I never posted the recipe here.

You know those days that just don’t go as planned? Well, when I have one, I tend to wind up with a strong craving for some sort of food. Exactly what I crave tends to vary; sometimes it’s something sweet, sometimes it’s something greasy, and sometimes it’s just cheese.
This past Tuesday–when I stayed home all day for a chimney inspector who didn’t show up, when my pantry-door update didn’t go as planned, and when tent caterpillars took over my patio and walkway–what I craved was some cinnamon-sugar goodness. I wanted snickerdoodles.
I won’t lie: the craving was relatively well timed. I was due to write a recipe review, and Sally’s Baking Addiction’s Soft & Thick Snickerdoodles recipe had been floating around my head as an option for months. Which may have helped inspire the craving, now that I think about it.

Cravings–we all get them. Yet there are some flavour cravings that I rarely get. Salt, for example, or anything sour. Lemons fall into that latter category.
And yet, every once in a while, they happen. A couple of weeks ago, I was hit by a major craving for something lemon-flavoured. Especially a lemon-flavoured baked something. I tried staving the craving off with something a little more healthy, but that attempt didn’t work (mostly because that recipe didn’t work out for me).
So, I went back to an old favourite of mine: lemon loaf. This time, though, I added a little something extra, which led me to a new spin on the old classic. I ended up with this Strawberry-Swirled Lemon Loaf.

I’m kind of in love with this frosting. Did you know that? If you follow my instagram, you may have seen my excited post when I first made it. That colour, and the flavour… they’re both incredible.
The funny thing is, this frosting never would have happened if it hadn’t been for another recipe that went wrong. See, my original plan for Gerda’s bridal shower was to make a blueberry cream cheese frosting. It would end up being naturally purple, and would complement the chocolate cupcakes perfectly.

Time for a confession: I’ve never gone out of my way to make a gluten-free dessert before. I mean, I’ve made them, but it’s always been purely coincidental.
Right up until this past July, that is. For Gerda’s bridal shower last month, I volunteered to make half of the cupcakes. Someone else was working on the vanilla ones for the dress-shaped cake, so I figured I’d make chocolate. I was a little more hesitant when they asked I make them gluten-free, but I decided to give it a shot. I could make a test batch ahead of time and, if they didn’t work out, I’d switch to a boxed kind–one that was less likely to go wrong.
I’m happy to say that my attempt to make home-made gluten-free cupcakes went quite well, all thanks to Flippin’ Delicious’s Best Gluten Free Chocolate Cake.

Brownies are amazing, don’t you think? Especially when they’re warm. They’re chocolaty, soft and chewy, and perfect with a scoop of vanilla ice cream and strawberries.
At least, they’re that amazing when they’re done right. Unfortunately, in my quest for the perfect brownie recipe, I’ve come across a lot that don’t quite meet the mark.
This one, though. This recipe checks all the boxes. And, as an added bonus, it has the strawberries built right in.
