I’m not gonna lie: strawberries are one of my go-to fruits. I turn to them regularly, whether it’s to eat them as they are or to use them in a recipe of some sort. You don’t have to look far for proof on that last point; just check out the “strawberry” and “strawberries” tags here on my blog.
In these Strawberry and Cream Cupcakes, however, the strawberry flavour is just a little more subtle than you might expect. It’s definitely there, it’s just not overpowering. Instead, it’s nicely balanced by a soft, creamy vanilla base–perfect for a light-tasting dessert.

(Please note that this post was originally written in 2013. I’ve updated the photos and the recipe itself, but kept the post’s text the same as it was when I first posted it. I hope you enjoy it!)
I know this may seem like I’m contradicting what I said in my last recipe post about not being a big fan of pasta, but I’m going to give you another pasta-related recipe.
This time, though, it’s a slightly different version of one of my family’s recipes.
Macaroni and Cheese has come so far in its lifetime. It started out pretty simple, comprised of just macaroni noodles, cheese and butter. Now, restaurants are serving the dish with anything from a combination of cheeses to a heaping pile of lobster. It’s become a comfort food with a gourmet twist, and a part of me absolutely loves that. But admittedly, that could just be because I love the lobster.

Do you know what’s weird? This Apple Pie Cupcake recipe is one of my favourites. I came up with the recipe three or four years ago, and anyone who’s ever tried it loves it. And yet, somehow, I never posted the recipe here.
I figure it’s time to change that.

Cravings–we all get them. Yet there are some flavour cravings that I rarely get. Salt, for example, or anything sour. Lemons fall into that latter category.
And yet, every once in a while, they happen. A couple of weeks ago, I was hit by a major craving for something lemon-flavoured. Especially a lemon-flavoured baked something. I tried staving the craving off with something a little more healthy, but that attempt didn’t work (mostly because that recipe didn’t work out for me).
So, I went back to an old favourite of mine: lemon loaf. This time, though, I added a little something extra, which led me to a new spin on the old classic. I ended up with this Strawberry-Swirled Lemon Loaf.

I’m kind of in love with this frosting. Did you know that? If you follow my instagram, you may have seen my excited post when I first made it. That colour, and the flavour… they’re both incredible.
The funny thing is, this frosting never would have happened if it hadn’t been for another recipe that went wrong. See, my original plan for Gerda’s bridal shower was to make a blueberry cream cheese frosting. It would end up being naturally purple, and would complement the chocolate cupcakes perfectly.
