Chicken Pot Pie makes for such a wonderful comfort-food dish. It’s warm and it’s easy – if you’ve made it in advance, that is.

Admittedly, this recipe takes a bit of time to prepare. Cooking the chicken and preparing the filling together take 45 minutes to an hour, and then it takes about an hour to cook the dish itself.
But you know what? It’s totally worth it.
This is one of the best Chicken Pot Pies I’ve ever eaten. It has a great flavour, and the brothy part of the filling was just the right thickness.
And the best part? This recipe made three large pies, enough for six meals. I froze two of the pies, and I’m definitely looking forward to eating them.
